Southwest chicken salad
Ingredients:
3 cups shredded or diced cooked chicken
1 14.5 oz can of black beans, rinsed and drained
1 cup corn, fresh or canned
1 red bell bell pepper, diced
⅓ cup diced red onion
¼ cup fresh cilantro, chopped
For the dressing:
½ cup sour cream
Juice of 1 large lime
1-2 teaspoons hot sauce (I used Franks)
½ teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon kosher salt


Directions:
Prepare the dressing: In a small bowl, whisk together the dressing ingredients until well combined.
Combine salad ingredients: In a large bowl or serving bowl, add chopped or diced chicken, black beans, corn, diced red bell pepper, diced red onion, and chopped cilantro.
Mix with dressing: Pour the prepared dressing over the salad ingredients and mix well to coat them. Adjust the dressing to taste.
Chill before serving: Cover the salad and chill in the refrigerator for at least an hour to allow the flavors to meld.
Serve and enjoy: When serving, toss the salad well and enjoy the refreshing flavors of the Southwest.
