Cinnamon Apple Cake
Ingredients:
½ cup butter, softened
½ cup sugar
½ cup dark brown sugar
2 eggs
¼ tsp vanilla extract
1 ¼ cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp salt
1 ½ cups chopped and peeled apples (about 2 medium apples)
½ cup chopped walnuts
Directions:
Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with cooking spray.
Cream Butter and Sugars: In a large bowl, beat softened butter, sugar, and dark brown sugar together with an electric mixer until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
Incorporate Apples and Walnuts: Gently fold in the chopped apples and walnuts until evenly distributed throughout the batter.
Bake: Spoon the batter into the prepared cake pan, spreading it out evenly. Bake for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool: Allow the cake to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.
Serve: Once cooled, slice the cake into portions and serve with a scoop of vanilla ice cream for an extra special treat.
